Healthy, easy, yummy 5 ingredient banana muffins for Kid-sized chefs to enjoy

Especially, perfectly good food, that just doesn’t look so pretty any more, like those poor overripe speckled bananas!!!

I was looking for a healthy recipe to get kids excited and me…avoid feeling the guilt of stuffing them with unhealthy junk. This one got me really curious: absolutely no processed ingredients, no sugar and… just 5 healthy items in addition to overripe bananas!  We tried it: yes!!! Healthy, yummy, easy, kid approved and quickly devoured by three tough little critics :)

Prep time: 10 min
Cook time: 10-20 min (depending on a size of your muffin pan)
Total time: 25-30 min


Ingredients

  • 2 large ripe bananas
  • 1 cup of whole wheat flour (you are welcomed to use regular or mix it together - go as healthy as you are comfortable)
  • 2 eggs
  • ¼ cup of melted extra virgin coconut oil (feel free to substitute for any vegetable oil if you are not a fan of coconuts;  I personally love cooking with coconut oil - you can’t ever taste it and it is such a healthy option!)

  • ¼ cup of maple syrup (sugar free one, or not sugar free, or, again, substitute it for your favorite way to sweeten it up - keep in mind you don’t need much with sweet ripe bananas in a tow)!
  • Optional (but my kids LOVED it): 1 teaspoon of ground cinnamon 
  • Optional: chocolate chips (ok, I don't even need to say who was the driving force behind this ingredient, ha-ha!)

Preparation:

  1. Preheat the oven for 350’F.  
  2. Mix all ingredients in this order: flour, coconut oil, eggs, mashed bananas, baking soda, maple syrup - and cinnamon, if you enjoy it’s aroma as much as we do :). I love my food processor, so I just used a metal S blade attachment and let it rip: batter was ready in less than a minute, cutting our prep time in half!   3. Pour (or use a spoon) the batter into the muffin pan.  You can prep the pan by rubbing it with more coconut oil to avoid muffins getting stuck. I just inserted little paper cups and poured the batter right in.
  4. Ok, that's where my kids sneaked in a few dark chocolate chips on the top ;)
  5.   6. Let it cool off before eating and… enjoy!!! My boys gave it two thumbs up pairing it with a nice cup of vanilla soy milk, and really raved over it when they enjoyed it with a cup our own healthy Homemade Hot Chocolate after a fun snowy day!
